Pavlova for January 26th Australia Day

Australia Day 26th January is not only my favourite day because it’s a day to celebrate all things Australian including people who now call Australia home but because it’s a day that I can have a very good excuse to have one of my favourite desserts, Pavlova.

Light, soft, fluffy, and delicately crisp on the outside are the words I would use to describe the “Aussie” Pav!

It’s so light that you could eat more than one slice!

So, would you like to know how to make it? Ingredients

Of course you do!  I would 🙂

Ingredients

  • 2 egg whites
  • 1½ cups sugar (or less if you prefer less sweetness)
  • ½ teaspoon vanilla
  • 1 teaspoon cornflour
  • 1 teaspoon vinegar
  • 4 tablespoons boiling water

Method

  1. Insert the butterfly and then place all ingredients (add sugar very slowly) in theTM31 bowl and mix on speed 3 , slowly increasing to a higher speed for approximately 15 minutes. (or when you notice it has a meringue type consistency)
  2. Prepare Pavlova tray with foil and non-stick baking paper. (You can make mini pavs or just one big one.  I prefer minis (It just means you can eat more and not feel as guilty – well, that’s what I think anyway!)
  3. Spread mixture onto prepared tray in a 20 cm diameter circle.
  4. Preheat oven at 220°C but reduce heat setting after 15mins of preheating
  5. Bake at 180°C for 10 minutes.
  6. Reduce heat to 150°C, then bake for a further 45 minutes.
  7. Top or fill with freshly whipped cream and fruit (strawberries, passion fruit – is very tasty when you drizzle the sweetness over the cream, sliced mango, sliced bananas, even pureed mango is delicious) My favourite are mango and banana, but I like the look strawberries give.

Note : if you don’t have a thermomix…..firstly you should invest in one, it will change the way you eat and cook and give you your time back!  🙂 Seriously,  if you don’t have one then you may want to use a hand mixer or a whisk (which could take forever!)
